Tonight I had a taste for something light, flavorful and simple, so I decided to make something I haven’t made in a while, one of my favorite meals as a child, my Mother’s famous pasta salad! I had most of the ingredients but, I did have to modify her recipe slightly. She uses spaghetti noodles but I wanted to try shells this time. It came out delicious and I plan on experimenting more with a few changes to her recipe but, don’t tell!!! 🙂 I would list the ingredients but, then it wouldn’t be a secret anymore and my mother would probably kill me?! Sooo, you’ll have to figure out your own recipe…sorry.
For dinner on Tuesday I really wanted to try something a little different. I decided to inject a chicken with a cajun marinade and deep fry it the same way I would a turkey. First, I used a Caribbean jerk spice rub for the seasoning. Once the chicken finished cooking I glazed the entire bird with a spicy jerk-bbq sauce that I had been experimenting with for a while. For the sides I chose steamed broccoli, three cheese tortellini with a garlic parmesan sauce, baked potato and garlic bread. This was my first time preparing my chicken and pasta this way but, everything turned out really good together and I would definitely try this recipe again in the future. Happy eating!
