One of my favorite times of the year is the NBA All-Star Weekend. To celebrate I decided to get out on the grill despite the cold temperature. I chose to grill turkey sausage, chicken wings and thin steaks. After a coating in my special sweet and spicy bbq sauce everything was ready to go! We added some potato salad and deviled eggs (not pictured) to finish things off and the family has been enjoying this delicious summer food all weekend long. I can’t wait for the big game tonight! Tonight I had a taste for something light, flavorful and simple, so I decided to make something I haven’t made in a while, one of my favorite meals as a child, my Mother’s famous pasta salad! I had most of the ingredients but, I did have to modify her recipe slightly. She uses spaghetti noodles but I wanted to try shells this time. It came out delicious and I plan on experimenting more with a few changes to her recipe but, don’t tell!!! 🙂 I would list the ingredients but, then it wouldn’t be a secret anymore and my mother would probably kill me?! Sooo, you’ll have to figure out your own recipe…sorry.
Last night I enjoyed a very light, delicious dinner of chickpea and sautéed shrimp salad stuffed in avocado shells with seasoned cumbers and tomatoes, finished with thinly sliced sharp cheddar and pepper-jack cheeses.
Sautéing vegetables to make chicken chili for the colder temperatures. The end result is a delicious and hearty chicken chili garnished with sharp cheddar cheese, kalamata olives, a dollop of sour cream, and served with a slice of cornbread.
This is my dinner for tonight. Grilled turkey breast, sharp cheddar jack cheese, tomato, avocado, romaine lettuce, and olive oil mayo on a toasted croissant.
