The downtown River-fest is one of my favorite local events. I absolutely love food trucks and I’m happy that this city has decided to embrace the growing food truck culture. I’ll admit though, it is very overwhelming for me with all of the wonderful sights and smells everywhere! I’m always so tempted to try all of the different foods on display that I sometimes forget to photograph it. It’s also very difficult to take pictures and eat at the same time, but somehow I still manage to multitask! 😉

Hello all! I wanted to share a photo of a tasty breakfast I prepared a few weeks ago. It consists of homemade chicken sausage, baked hand-cut yellow potatoes, and egg substitute with melted American cheese.
This beautiful and delicious Cobb salad was prepared by my beautiful model friend and aspiring chef, Vanessa Cobb. I guess that makes this literally a real Cobb salad? 🙂 It was awesome! Thank you V!!! For those wondering, this salad was prepared with romaine lettuce, cherry tomatoes, cucumbers, bleu cheese crumbles, turkey bacon, boiled eggs, and honey mustard dressing.
I love stopping by Mama Goldberg’s and getting my favorite salad. All of the salads are delicious, the proportions are great and there seems to be an endless amount of ingredients to choose from! Here is my personal combination.

As for the dressing, that depends on what I’m in the mood for but I typically order some type of vinaigrette.
These delicious wings were a test recipe prepared by the lovely Terri White. I was chosen to be the guinea pig for this tasty experiment and let me just say that it was totally worth it!!! I would love to list the ingredients used in this dish but, since it is not my personal recipe I honestly don’t know what what used to prepare them? If and when I find out that information I’ll be more than happy to share it with everyone.
One of my favorite restaurants in town featuring one of my favorite dishes, Com Gà and Gỏi Cuốn Gà (not pictured) Roughly translated it’s marinated grilled chicken over jasmine rice, chopped salad drizzled with scallion oil, and fish sauce (nuoc mam).
My baked chicken wings with a combination of herbs and spices. I’m usually a sauce person but I decided to try out a dry rub blend that I’ve been experimenting with. I’m proud to say that this batch turned out very good and once I work on the spices some more I’ll list the ingredients for those who want to try it.
One of my favorite times of the year is the NBA All-Star Weekend. To celebrate I decided to get out on the grill despite the cold temperature. I chose to grill turkey sausage, chicken wings and thin steaks. After a coating in my special sweet and spicy bbq sauce everything was ready to go! We added some potato salad and deviled eggs (not pictured) to finish things off and the family has been enjoying this delicious summer food all weekend long. I can’t wait for the big game tonight! Tonight I had a taste for something light, flavorful and simple, so I decided to make something I haven’t made in a while, one of my favorite meals as a child, my Mother’s famous pasta salad! I had most of the ingredients but, I did have to modify her recipe slightly. She uses spaghetti noodles but I wanted to try shells this time. It came out delicious and I plan on experimenting more with a few changes to her recipe but, don’t tell!!! 🙂 I would list the ingredients but, then it wouldn’t be a secret anymore and my mother would probably kill me?! Sooo, you’ll have to figure out your own recipe…sorry.
Last night I enjoyed a very light, delicious dinner of chickpea and sautéed shrimp salad stuffed in avocado shells with seasoned cumbers and tomatoes, finished with thinly sliced sharp cheddar and pepper-jack cheeses.
For dinner on Tuesday I really wanted to try something a little different. I decided to inject a chicken with a cajun marinade and deep fry it the same way I would a turkey. First, I used a Caribbean jerk spice rub for the seasoning. Once the chicken finished cooking I glazed the entire bird with a spicy jerk-bbq sauce that I had been experimenting with for a while. For the sides I chose steamed broccoli, three cheese tortellini with a garlic parmesan sauce, baked potato and garlic bread. This was my first time preparing my chicken and pasta this way but, everything turned out really good together and I would definitely try this recipe again in the future. Happy eating!
Sautéing vegetables to make chicken chili for the colder temperatures. The end result is a delicious and hearty chicken chili garnished with sharp cheddar cheese, kalamata olives, a dollop of sour cream, and served with a slice of cornbread.

I’m Out On The Grill!!! Tonight’s Dinner Is, Turkey Burgers, Turkey Sausage, Ribeyes, And Skirt Steak For Authentic Carne Asada Tacos. Sides Are, Balsamic Glazed Asparagus, Zucchini, Squash, Potato Salad And Deviled Eggs (Not Pictured)
This is my dinner for tonight. Grilled turkey breast, sharp cheddar jack cheese, tomato, avocado, romaine lettuce, and olive oil mayo on a toasted croissant.
Chopped yellow potatoes, sea salt, cracked pepper, paprika, onion powder, garlic, Italian seasoning and olive oil baked until golden brown.
Shrimp, sausage, bacon, mushrooms, peppers, with six cheese grits and parmesan sauce.
Lobster tail, garlic scampi shrimp, lemon parmesan tilapia, and garlic mash potatoes.
Anyone that knows me knows that I LOVE to grill any and everything! It comes as a total shock to me that the last time I actually grilled was over year ago! My last grill was destroyed in a bad storm and I never bought a replacement. It’s really unlike me to go this long without a grill especially when I think about all the new recipes I’ve learned and want to experiment with (I watch a lot of Food Network and The Cooking Channel) 😉 So yesterday I decided since family is here from back home to celebrate the holiday weekend now would be a great time to purchase another grill and get my Bobby Flay on! Since my camera never leaves my side I decided to take a shot of my first grilling of the year, so here you go…bbq coming soon!
My family and I don’t eat pizza very often but, when we do we eat at our favorite place in Columbus, Picasso’s Pizza. The food is amazing and I’ve never had a bad experience there. This particular pizza is their incredible buffalo chicken style pizza. If you’re ever in Columbus Georgia and want top quality pizza I highly recommend you go to Picasso’s in the downtown area.

I forgot to post this picture of my special ice cream birthday cake from yesterday that my wonderful kids got for me. It was butter-pecan ice cream and chocolate cake…mmmm! I love my family so much!!!! Thanks kids!!!!
