It’s hard to believe it’s almost winter yet again. It seems as though this year flew by. I woke up early this morning to a street covered in frost! Frozen cars, pavement, homes, and plants. I was loving the icy glaze coating on everything so I decided to get up close on a few plants to capture the tiny ice particles. Here are a few images of my very brief time outside today.
For dinner on Tuesday I really wanted to try something a little different. I decided to inject a chicken with a cajun marinade and deep fry it the same way I would a turkey. First, I used a Caribbean jerk spice rub for the seasoning. Once the chicken finished cooking I glazed the entire bird with a spicy jerk-bbq sauce that I had been experimenting with for a while. For the sides I chose steamed broccoli, three cheese tortellini with a garlic parmesan sauce, baked potato and garlic bread. This was my first time preparing my chicken and pasta this way but, everything turned out really good together and I would definitely try this recipe again in the future. Happy eating!
