No BBQ for me this Memorial Day. Instead I prepared a simple grilled chicken and turkey sausage jambalaya. No cook-outs, parties or celebrating, just a quiet dinner with family and some NBA basketball. Remember, this is a day to honor and pay our respect to those who gave the ultimate sacrifice for us to enjoy the freedoms we so often take for granted. I’ll say a prayer for all of the fallen soldiers as well as their families. Blessings.

Have you ever wondered what ladybugs eat? Most of us think ladybugs are cute and harmless, and if you were like me you probably even thought they only ate plants? Well, that’s not whole story. The truth is, most ladybugs are predators. They eat other insects that we would consider pest, and most farmers or gardeners love them for this very reason. I ran across these ladybugs yesterday while taking out the trash. At first glance I didn’t notice the little red bugs present but, after I spotted them I figured maybe they’re ladybug larvae or something? I was certainly shocked to find that in fact they’re the ladybug’s food! These little red bugs are called Aphids. They tend to be a real pest to plants, so these hungry ladybugs were actually doing us humans a favor by feasting on the tiny red creatures. It’s amazing how we can discover new things everyday upon closer observation. Interesting facts are all around us from the very obvious right down to the most inconspicuous. I try to pay close attention to everything when I’m out, and having my camera helps me to document and illustrate what I discover. I await my next discovery.

I love to go to the river and capture interesting photos of the rafters and surfers. I love photographing water even though I’m terribly afraid of it! It just looks so beautiful and refreshing! The water sport participants always seem to have so much fun. I wish I could be brave enough to do it one day….maybe one day?

Next up for today is a simple chickpea salad with fresh vegetables and sharp cheddar cheese, prepared for me by the beautiful Terri White. This is also a very cool, light, simple and delicious meal that can be eaten for lunch, dinner or as a snack. Sorry but, no time for any fancy plating, this batch was for prepared for me after a long day of shooting while I enjoyed NBA basketball. As with most any dish these days you can google different recipes and tweak this dish to your own personal liking. Happy eating!!!

I know that it has been a long time since I’ve posted anything into my food category and it’s a shame because, I’ve eaten some really wonderful food since my last entry. I’ve traveled quite a bit, as well as cooked/experimented with lots of great dishes since my last food entry. Well, I promise to share more food photos from my travels as well as from my own kitchen from this point on. First up, one of my favorite Vietnamese dishes, Bun Ga Nuong! Bun Ga Nuong is a simple meal consisting of vermicelli rice noodles mixed with fresh vegetables and topped with grilled chicken. Served with Nuoc Cham sauce (fish sauce) it is light and absolutely delicious!!! This particular meal was purchased at one of my favorite local restaurants, Pho Vy, here in Columbus Ga. If you’re ever in town I highly recommend checking them out.
